Mata Kiwi

6 ripe kiwis

1 litres boiling water

2 tsp Matariki tea leaves

2 cups fresh mint leaves, packed

½ cup fresh lemon juice

½ cup sugar

1 cup Tequila (I love Patron)

2 cups club soda

Fresh mint sprigs (for garnish)

2 kiwis, thinly sliced (for garnish)

Boil 1 litre of water in a kettle or a pot. When boiling, remove from the heat and add the tea and the fresh mint leaves. Cover and allow to steep for at least 30 minutes.

While your tea is steeping, heat sugar and fresh lemon juice until the sugar dissolves and the liquid becomes clear. Set aside.

Muddle the ripe kiwis.

Once the tea is steeped, strain it into a large pitcher, discarding the mint and tea leaves. Mix in the muddled kiwi and lemon simple syrup and refrigerate until cool.

When your iced tea is cool, add some fresh mint and kiwi slices to the pitcher if you like. You can now pour the tequila into the pitcher OR you can add tequila to individual cocktails.

Serve your Mata Kiwi tea over ice. Garnish with a kiwi slice or two and a sprig of fresh mint for flair.
